Ingredients:

  • 200g shrimp (about 7 oz)
  • 1 fresh cucumber
  • 1 ripe tomato
  • Half a red pepper
  • 1 romaine lettuce
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook the prawns in salted water for about 3 minutes until they turn pink. Then strain and leave to cool.
  2. Wash cucumber, tomato and pepper and cut into cubes. Wash and chop the romaine lettuce.
  3. In a large bowl, mix romaine lettuce, chopped vegetables, and cooled shrimp.
  4. In a small bowl, combine the lemon juice, olive oil, salt and pepper to make the salad dressing.
  5. Pour the dressing over the salad just before serving, stirring gently so that all the ingredients are evenly coated.
