Ingredients:
- 4 medium beets
- 1 onion
- 1 clove of garlic
- 4 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 100g (3.5 oz) walnuts
- A bunch of fresh parsley
- Salt and pepper to taste
Instructions:
- Peel beets, wash and cook until soft. Then cut them into cubes.
- Peel the onion and dice it into small cubes. Peel the garlic and squeeze through the garlic press.
- Heat the olive oil in the skillet. Add the onion and garlic, then cook over medium heat until the onion is translucent.
- Add chopped beets, balsamic vinegar, salt and pepper to the onion. Fry everything together for about 5 minutes.
- Chop the walnuts into smaller pieces and add to the salad. Mix everything thoroughly.
