Ingredients:

  • 4 medium beets
  • 1 onion
  • 1 clove of garlic
  • 4 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 100g (3.5 oz) walnuts
  • A bunch of fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Peel beets, wash and cook until soft. Then cut them into cubes.
  2. Peel the onion and dice it into small cubes. Peel the garlic and squeeze through the garlic press.
  3. Heat the olive oil in the skillet. Add the onion and garlic, then cook over medium heat until the onion is translucent.
  4. Add chopped beets, balsamic vinegar, salt and pepper to the onion. Fry everything together for about 5 minutes.
  5. Chop the walnuts into smaller pieces and add to the salad. Mix everything thoroughly.
  6. Serve the salad on plates, sprinkled with finely chopped parsley.
