Ingredients:

  • 3 bell peppers (one red, one yellow, one green)
  • 1 onion
  • 3 tablespoons olive oil (45ml / 1.5 fl oz)
  • juice of 1 lemon
  • salt and pepper to taste
  • half a bunch of parsley

Instructions:

  1. Wash the peppers, remove the seeds and cut into thin strips. Peel the onion and also cut it into thin strips.
  2. In a large bowl, mix the chopped peppers and onions.
  3. In a small jar, mix the olive oil, lemon juice, salt and pepper. After adjusting the taste, pour the sauce into the bowl with the vegetables.
  4. Mix everything gently, and finally sprinkle with chopped parsley.
