  • 200g quinoa (7oz)
  • 1 large ripe avocado
  • 200g cherry tomatoes (7oz)
  • 1 red onion
  • A bunch of fresh parsley
  • Juice of 1 lemon
  • 4 tbsp olive oil (2.1fl oz)
  • Salt and freshly ground pepper to taste

Instructions:
