  • 2 medium zucchini
  • 2 eggs
  • 1 onion
  • 2 cloves of garlic
  • 100g (3.5oz) cottage cheese
  • 50g (1.7oz) breadcrumbs
  • Salt, pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. Preheat oven to 180°C (356°F). Prepare an ovenproof dish.
  2. Wash zucchini, cut into thin slices. Finely chop the onion and garlic.
  3. Heat the oil in a pan, then add the chopped onion and garlic. Fry until the onion becomes glassy.
  4. Add zucchini slices, fry for a few minutes until zucchini is tender. Season with salt and pepper.
