Ingredients:

  • 1 medium cauliflower (about 600g (21oz))
  • 1 large onion (about 200g (7oz))
  • 2 cloves of garlic
  • 1 red pepper
  • 150g (5.3oz) cottage cheese
  • 1/2 liter of milk
  • 2 tablespoons of flour
  • 50g (1.8oz) butter
  • Salt to taste
  • Freshly ground pepper to taste

Instructions:

  1. Divide the cauliflower into florets and cook in lightly salted water until soft but still crunchy.
  2. Chop the onion and garlic, and chop the pepper into small cubes.
  3. Melt the butter in a pan, add the onion, garlic and paprika, fry until the vegetables are soft.
  4. In a small pot, prepare the béchamel sauce: heat the milk, then add the flour, stirring until a smooth sauce is obtained.
  5. Mix the cooked cauliflower, onion, garlic, paprika and béchamel sauce together, season with salt and pepper.
  6. Pour everything into an ovenproof dish, sprinkle with grated cheese and bake in an oven preheated to 180°C for about 30 minutes.
