  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon coconut oil or olive oil

Sauce:

  • 1 tablespoon butter or coconut oil
  • 2 cloves of garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can tomato puree (about 14 ounces)
  • Salt and pepper to taste

Additional:

  • 8 keto tortillas (made with almond flour or other low-carb ingredients)
  • 5.3 ounces grated yellow cheese (e.g., cheddar)

Instructions:

  1. Preheat the oven to 350°F.
  2. Prepare the filling: In a large pot, heat the coconut oil or olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for a few minutes until they are soft and slightly translucent.
