  • 200g pickled mixed vegetables (carrots, parsley root, celery)
  • 150g sausage (e.g., chorizo)
  • 150g smoked bacon
  • 1 large onion
  • 2 garlic cloves
  • 2 tablespoons clarified butter or coconut oil
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Start by preparing the ingredients. Squeeze the sauerkraut to remove excess salt and acid. Then chop it into small pieces.
  2. Squeeze the pickled mixed vegetables as well and cut them into smaller pieces.
  3. Slice the sausage and smoked bacon into thin slices or cubes.
  4. Finely chop the onion and garlic.
  5. In a large pot or deep pan, heat the clarified butter or coconut oil over medium heat.
  6. Add the chopped onion and garlic. Sauté until they become soft and lightly golden.
  7. Add the sausage and smoked bacon to the pot. Sauté them for a few minutes until they brown.
  8. Then add the sauerkraut and pickled mixed vegetables. Mix all the ingredients until well combined.
  9. Sprinkle with caraway seeds, add the bay leaf, and season with salt and pepper to taste. Stir to evenly combine the ingredients.
