Ingredients:

  • 200g (7oz) buckwheat
  • 1 large onion
  • 2 cloves of garlic
  • 1 large carrot
  • 1 large bell pepper
  • 1 medium zucchini
  • 100g (3.5oz) peas
  • 4 tablespoons of olive oil
  • 1 liter of vegetable broth
  • Salt and pepper to taste

Instructions:

  1. We start by chopping the vegetables. Cut the onion, garlic, carrot, pepper and zucchini into small pieces.
  2. Heat the olive oil in a large frying pan or deep pot. Add chopped onion and garlic, fry until glassy.
  3. Add the groats to the pot, mix well so that it is covered with oil.
  4. Then add chopped vegetables and peas to the pot. Fry everything for about 5 minutes.
  5. Now it's time to add the broth. Add it gradually, about 1/3 at a time, stirring from time to time. Cook until the buckwheat is soft.
  6. Finally, add salt and pepper to taste, mix and cook for a few more minutes.
