Kachotto with chicken - a delicious and filling meal for every occasion
Imagine that traditional risotto meets buckwheat and is joined by juicy chicken. Sounds heavenly, right? This is kasotto - a dish that combines the best of Italian and Polish cuisine. Kachotto with chicken is a recipe that is gaining more and more popularity among lovers of healthy, filling and tasty food. Although slightly less known than traditional risotto, kasotto deserves just as much recognition. After all, it is a dish that combines the nutritional value of buckwheat, the richness of chicken flavor and the expressiveness of additives, such as fresh vegetables and aromatic herbs. And all this served in the form of a creamy, fragrant and melt-in-your-mouth dish that is both easy to prepare and versatile - perfect for both an everyday lunch and an elegant dinner.
Ingredients:
- 2 chicken breasts (about 500g/17.6oz)
- 1 cup buckwheat groats (about 200g/7oz)
- 1 onion (about 150g/5.3oz)
- 2 cloves garlic (about 10g/0.35oz)
- 2 carrots (about 200g/7oz)
- 1 liter (33.8fl oz) chicken stock
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- First, wash and dry the chicken breasts. Then cut them into small pieces.
- Heat the oil in a pan and add the chopped chicken. Fry until the meat turns white and starts to brown slightly.
- Meanwhile, peel and chop the onion and garlic. Peel the carrots and chop into small cubes.
- Add the onion and garlic to the chicken and cook for a few more minutes until the onion is translucent.
- Add carrots and buckwheat to the pan. Cook everything together for about 5 more minutes, stirring constantly.
- Now add the broth, salt and pepper. Reduce heat to medium and cook until grits are tender and most of the broth has been absorbed. This should take about 20 minutes.
- Finally, taste again and add salt and pepper if necessary.
