  • 300 g wheat flour, e.g. cake flour (10.6 oz)
  • 150 ml very warm water (5.07 fl oz)
  • 2 full tablespoons of vegetable oil (30 ml)
  • a good pinch of salt
  • 2 large tomatoes
  • a pinch of salt
  • 1 medium onion (200 g, 7 oz)
  • 1 tablespoon of clarified butter
  • 2 tbsp cooking oil

Instructions:

  1. Sift the flour into a wide bowl. Add salt and oil.
  2. Pour hot or warm water and knead the dough for a while, preferably by hand. The dough should be soft, plastic and elastic.
  3. Wrap the ball of dough in foil and set aside for 20 minutes. The dough after aging will not shrink when rolling.
