Ingredients:

  • 400 grams (14 oz) chanterelles
  • 6 large eggs
  • 3 tablespoons of butter, such as clarified butter (about 42g or 1.5 oz)
  • A handful of fresh dill
  • Tbsp lemon juice
  • Spices: half a teaspoon of salt, 1/4 level teaspoon of pepper

Instructions:

  1. Prepare the chanterelles. If using fresh mushrooms, clean them of sand and other impurities. If using frozen chanterelles, thaw them naturally and then dry them.
  2. Cut the chanterelles into smaller pieces. Heat the butter in a medium-sized pan, then add the chanterelles. Fry them uncovered for about 10 minutes, stirring occasionally.
  3. While the chanterelles are frying, prepare the eggs. You can either crack them directly into the chanterelle pan or blend them in advance to a smooth liquid.
  4. Add the eggs to the pan with the chanterelles. Turn the heat down to minimum and heat the mixture for a few minutes, stirring constantly.
