Ingredients:
- 400 grams (14 oz) chanterelles
- 6 large eggs
- 3 tablespoons of butter, such as clarified butter (about 42g or 1.5 oz)
- A handful of fresh dill
- Tbsp lemon juice
- Spices: half a teaspoon of salt, 1/4 level teaspoon of pepper
Instructions:
- Prepare the chanterelles. If using fresh mushrooms, clean them of sand and other impurities. If using frozen chanterelles, thaw them naturally and then dry them.
- Cut the chanterelles into smaller pieces. Heat the butter in a medium-sized pan, then add the chanterelles. Fry them uncovered for about 10 minutes, stirring occasionally.
