Ingredients:

  • 2 chicken breasts
  • 200g (7oz) rice
  • 1 onion
  • 2 cloves of garlic
  • 1 red pepper
  • 1 yellow pepper
  • 200g mozzarella cheese (7oz)
  • 4 tbsp olive oil (2.1fl oz)
  • 2 teaspoons chicken seasoning
  • Salt and freshly ground pepper to taste

Instructions:

  1. Cook the rice according to the instructions on the package. Dice the chicken and season with chicken seasoning, salt and pepper.
  2. Heat 2 tablespoons of olive oil in a pan, then add the chopped chicken and fry until well browned on all sides. Remove the chicken from the pan and set aside.
  3. In the same pan, add the rest of the oil and the diced onion, garlic and peppers. Fry until the vegetables soften.
  4. Add cooked rice, fried chicken and vegetables to the casserole dish. Mix everything thoroughly.
  5. Sprinkle mozzarella on top. Put the casserole in the oven preheated to 200 degrees Celsius and bake for about 20 minutes, until the cheese is melted and slightly browned.
