At such a moment, nothing can replace a beautiful, delicate cocktail that can take us to sunny Italy in one sip. Bellini is just such a cocktail. Simple in its formula, yet full of elegance, it has become synonymous with refined simplicity. The name Bellini is not accidental. It is a tribute to one of the greatest masters of the Italian Renaissance, Giovanni Bellini. This cocktail, just like the paintings of the master, is distinguished by a subtle play of colors and flavors. Yellow peach nectar combined with pink Prosecco wine creates a visual effect reminiscent of the works of Bellini. Bellini was born in the famous Harry's Bar in Venice. Its creator, Giuseppe Cipriani, in the late 1940s decided to create a cocktail that would be as simple as possible, and at the same time beautiful to the eye and delicate to the palate. Bellini was an instant hit and has since gained international fame.

Ingredients:

  • 2 ripe peaches (approx. 200g (7oz))
  • 750 ml (25.4 fl oz) chilled Prosecco
  • 2 teaspoons (10 ml (0.34 fl oz)) of sugar

Instructions:

  1. First prepare the peaches. Rinse them with hot water and then peel them. Then cut into small pieces, removing the seeds.
  2. Put the chopped peaches in a blender , add sugar and mix until you get a homogeneous mass.
  3. Pour the peach mousse into the Prosecco glasses , filling them 1/3 full.
  4. Gently pour the chilled Prosecco into each glass , stirring gently with a spoon to combine the ingredients.
