Ingredients:

  • 450g (15.9oz) type 00 wheat flour
  • 250ml (8.5fl oz) slightly warm water
  • 15g (0.5oz) fresh yeast or a level teaspoon of dry yeast
  • 1 tbsp extra virgin olive oil
  • 1 level teaspoon each of salt and sugar
  • 80g (2.8oz) Grana Padano cheese DOP
  • 60g (2.1oz) thick tomato purée (about 3 tbsp)
  • 50g (1.8oz) of your favorite olives
  • 1 level teaspoon of dried oregano

Instructions:

  1. Pour a cup of slightly warm water into a bowl and add a teaspoon of yeast and a teaspoon of sugar. Wait a few minutes for the yeast to dissolve.
  2. Pour 450 grams of flour, olive oil and salt into a bowl. Knead the dough for at least 5 minutes.
  3. Shape the dough into a ball, dust with flour and leave to rise for an hour.
  4. Roll out the dough to a thickness of about 1 cm. Spread the tomato paste on it and sprinkle with oregano.
  5. Grate the cheese and slice the olives, then spread them over one half of the dough.
  6. Fold the dough in half, then divide it into strips about 2 cm wide. Twist each strip into a spiral.
  7. Place the fingers on a baking tray lined with baking paper and bake in an oven preheated to 220 degrees for about 15 minutes.
