Ingredients:

  • 500g (17.6oz) chicken breasts
  • 1 large onion
  • 2 cloves of garlic
  • 1 tablespoon of vegetable oil
  • 2 tablespoons of curry paste
  • 400g (14.1oz) canned tomatoes
  • 200ml (6.76 fl oz) coconut milk
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Wash chicken breasts, pat dry and cut into cubes. Peel the onion and garlic and chop finely.
  2. Heat the oil in a pan, then add the chopped chicken. Fry until the meat starts to brown.
  3. Add the onion and garlic to the chicken and fry for a few minutes.
  4. Add the curry paste and mix until everything is coated with the spices.
  5. Add the tomatoes and juice to the pan and mix. Reduce the heat, cover the pan and simmer for 10 minutes.
  6. Then add coconut milk, salt and pepper. Mix everything together and cook for a further 5 minutes.
