Ingredients:
- 1 whole rabbit (approx. 1.5kg/3.3lb)
- 4 tablespoons of mustard
- 4 tablespoons of honey
- 4 tablespoons of olive oil
- 1 onion
- 3 cloves of garlic
- 200ml (6.7fl oz) white wine
- 500ml (16.9fl oz) chicken stock
- Salt and pepper to taste
- Fresh herbs for decoration (e.g. parsley, thyme)
Instructions:
- Preheat oven to 180°C (350°F). Clean, wash, dry and divide the rabbit into portions.
- In a large skillet, heat the olive oil, add the chopped onion and garlic, then the rabbit pieces. Fry until browned.
- In a bowl, combine the mustard with honey, salt and pepper, then rub the mixture over the rabbit.
- Place the rabbit in an ovenproof dish, pour in the wine and broth, then bake for about 1 hour.
- While baking, baste the rabbit with the sauce that has formed during baking several times.
- Before serving, decorate the rabbit with fresh herbs.
