Ingredients:

  • 1 whole rabbit (approx. 1.5kg/3.3lb)
  • 4 tablespoons of mustard
  • 4 tablespoons of honey
  • 4 tablespoons of olive oil
  • 1 onion
  • 3 cloves of garlic
  • 200ml (6.7fl oz) white wine
  • 500ml (16.9fl oz) chicken stock
  • Salt and pepper to taste
  • Fresh herbs for decoration (e.g. parsley, thyme)

Instructions:

  1. Preheat oven to 180°C (350°F). Clean, wash, dry and divide the rabbit into portions.
  2. In a large skillet, heat the olive oil, add the chopped onion and garlic, then the rabbit pieces. Fry until browned.
  3. In a bowl, combine the mustard with honey, salt and pepper, then rub the mixture over the rabbit.
  4. Place the rabbit in an ovenproof dish, pour in the wine and broth, then bake for about 1 hour.
  5. While baking, baste the rabbit with the sauce that has formed during baking several times.
  6. Before serving, decorate the rabbit with fresh herbs.
