Viennese Pancakes: A Subtle Taste of Elegance
When talking about Austrian cuisine, many of us immediately think of sweets such as apple strudel , Sachertorte or pischinger . However, Austria is not only dessert masterpieces, but also delicious main dishes that all lovers of good food will love. Viennese pancakes, also known as Wiener Palatschinken , are one of those dishes that combine simplicity of preparation with exquisite taste. Like French crêpes , Viennese pancakes are thin and delicate, and their texture delights with its elasticity. However, what makes Austrian pancakes stand out is their rich flavor, which is often emphasized by the addition of vanilla or cinnamon to the batter. The stuffing is usually plum jam, rose jam or cottage cheese filling, which makes them a great choice for dessert, although they can also be served as a light lunch.
- 250g (8.8oz) wheat flour
- 500ml (2.1 cups ) of milk
- 4 eggs
- pinch of salt
- 1 tablespoon of sugar
- 1 teaspoon of vanilla extract
- 2 tablespoons of butter
- Plum jam, rose jam or cottage cheese for the filling
- In a large bowl, combine the flour, milk, eggs, salt, sugar, and vanilla extract. Use a mixer or a whisk to thoroughly mix the ingredients and get a smooth batter. It should have the consistency of slightly diluted sour cream.
- Melt a tablespoon of butter in the pan. While it is hot, pour a portion of the batter, spreading it over the entire surface of the pan to form a thin pancake. Bake it over medium heat for about 2-3 minutes until it is golden on the bottom and looks 'dry' on top. Turn the pancake over and bake for another 1-2 minutes.
- Repeat the process with the rest of the batter, adding more butter to the pan as needed. When each pancake is ready, spread it with the filling of your choice, roll it up or fold it in half and serve immediately.
