- 1 kg of tomatoes (2.2 lbs ) or 2 cans of canned tomatoes
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of vegetable oil
- 1.5 liters of vegetable stock (50 fl oz)
- 100g of rice (3.5oz)
- Salt, pepper to taste
- Fresh herbs for decoration (basil, parsley)
- Sauté finely chopped onion and garlic in hot oil.
- Add chopped tomatoes (or canned tomatoes) and fry for a few minutes.
- Pour in the broth and cook over low heat for about 30 minutes.
- In the meantime, cook the rice according to the instructions on the package.
- After 30 minutes, blend the soup until smooth, season with salt and pepper.
- Add the cooked rice to the soup, stir and cook for a few more minutes.
- Serve the soup garnished with fresh herbs.
