Radish and egg salad: A light and juicy proposition for every day

The radish, with its intense color and characteristic, slightly spicy taste, is the real star of this salad. - 2 bunches radishes (about 300g, 10.6oz)
- 4 eggs
- 2 green onions (alternative: 1 small onion)
- 2 tablespoons of mayonnaise (30ml, 1oz)
- Salt and pepper to taste
- Fresh herbs for decoration (e.g. dill, parsley)
- Hard boil the eggs. It usually takes about 9-12 minutes from when the water starts to boil. Once cooked, put them in cold water for a few minutes to make them easier to peel.
- In the meantime, wash the radishes and cut them into thin slices. You can do this with a knife or mandolin to get an even thickness.
- Peel the eggs and cut them into small pieces.
- Finely chop the green onions. If you're using regular onions, peel them first and then slice them.
- In a large bowl, combine chopped radishes, eggs, and onions. Add mayonnaise, then season with salt and pepper as desired. Mix everything thoroughly.
- The salad can be served right away, but it tastes even better if it has been chilled in the fridge for at least 30 minutes. Sprinkle with freshly chopped herbs before serving.
