- On the cake:
- 200g flour (about 7oz)
- 2 eggs
- 500ml milk (about 17 fl oz)
- pinch of salt
- 1 tablespoon of oil
- For the stuffing:
- 1 red pepper
- 1 onion
- 1 can black beans (about 15oz)
- 1 can of corn (about 15oz)
- 2 tablespoons of lemon juice
- 100g cheddar cheese (about 3.5oz)
- salt and pepper to taste
- 2 tablespoons of oil
- In a bowl, mix the flour, eggs, milk, salt and oil. Mix until you get a smooth dough. We leave it for 15 minutes.
- Heat the oil in a pan, add the diced onion and pepper. Fry until the vegetables soften.
- Add the drained beans and corn, season with salt, pepper and lime juice. Fry for a few minutes.
- In another pan, fry the pancakes on both sides until golden.
- Put a portion of stuffing on each pancake, sprinkle with grated cheese and roll up.
- Serve hot, topped with salsa or guacamole sauce .
