Ingredients:

  • On the cake:
  • 200g flour (about 7oz)
  • 2 eggs
  • 500ml milk (about 17 fl oz)
  • pinch of salt
  • 1 tablespoon of oil
  • For the stuffing:
  • 1 red pepper
  • 1 onion
  • 1 can black beans (about 15oz)
  • 1 can of corn (about 15oz)
  • 2 tablespoons of lemon juice
  • 100g cheddar cheese (about 3.5oz)
  • salt and pepper to taste
  • 2 tablespoons of oil

Instructions:

  1. In a bowl, mix the flour, eggs, milk, salt and oil. Mix until you get a smooth dough. We leave it for 15 minutes.
  2. Heat the oil in a pan, add the diced onion and pepper. Fry until the vegetables soften.
  3. Add the drained beans and corn, season with salt, pepper and lime juice. Fry for a few minutes.
  4. In another pan, fry the pancakes on both sides until golden.
  5. Put a portion of stuffing on each pancake, sprinkle with grated cheese and roll up.
  6. Serve hot, topped with salsa or guacamole sauce .
