- 2 tablespoons melted butter
- 1/3 cup erythritol (or another low-calorie sweetener)
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons coconut milk (or another plant-based milk)
- 1 1/2 cups almond flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup high-cocoa chocolate chips or keto chocolate chips
- In a large bowl, mix the melted butter with the erythritol (or other sweetener) until smooth.
- Add the egg, vanilla extract, and coconut milk, and mix again.
- In another bowl, combine the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients while stirring continuously until a uniform dough forms.
- Add the chocolate chips and gently mix to distribute them evenly throughout the dough.
- Prepare a baking sheet lined with parchment paper or a silicone mat. Form small dough balls and place them on the sheet, spacing them apart as the cookies will spread during baking.
- Place the baking sheet in a preheated oven at 180°C and bake for about 12-15 minutes, until the cookies turn golden around the edges.
- After baking, remove the cookies from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
