- 250g green lentils (about 8.8 oz)
- 1 large onion (about 150g / 5.3oz)
- 2 carrots (about 200g / 7oz)
- 2 cloves of garlic
- 1 liter vegetable stock (about 4.2 cups )
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh herbs for decoration (e.g. parsley or dill)
- Wash and soak the lentils for about an hour, then drain.
- Peel the onion, garlic and carrots and finely chop.
- Heat the oil in a pan, add the chopped onion, garlic and carrots, and then fry until the vegetables soften.
- Add the drained lentils to the vegetables and pour the broth over the whole thing. We bring to a boil.
- Simmer the soup over low heat for about 40 minutes, until the lentils are soft.
- Finally, season the soup with salt and pepper to taste and decorate with fresh herbs before serving.
