- 500g (17.6oz) wheat flour
- 40g (1.4oz) fresh yeast
- 80g (2.8oz) sugar
- 250ml (8.5fl oz) milk, warmed
- 80g (2.8oz) butter, melted
- pinch of salt
- zest of one lemon
- 600g (21oz) fresh fruit (strawberries, raspberries, peaches, etc.)
- 2 tablespoons of potato flour
- 2 tablespoons of sugar
- Dissolve yeast in warm milk with added sugar. Leave for 10 minutes for the yeast to work.
- In a large bowl, mix the flour, salt and lemon zest. Add butter and yeast leaven. Knead the dough until it becomes smooth and elastic.
- Cover the dough with a cloth and leave in a warm place for about 1 hour to double in size.
- In the meantime, prepare the fruit: wash, dry and cut into smaller pieces (if they are large). Mix the fruit with the potato flour and sugar.
- After an hour, put the risen dough on a baking tray lined with baking paper, form the edges and spread the fruit on top.
- Bake in an oven preheated to 180°C (356°F) for about 30-40 minutes, until the pastry is golden and the fruit is juicy.
