Ingredients:

  • 8-10 corn or flour tortillas
  • 500 g (17.5 oz) ground beef or chicken (or vegetables, such as chickpeas)
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 bell pepper, diced
  • 1 can of diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon oregano
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2-3 tablespoons oil
  • 200 g (7 oz) grated cheese
  • 1 can of tomato puree
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • 1 cup chicken or beef broth
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  2. In a frying pan, heat oil and add the chopped onion. Sauté until golden brown.
  3. Add garlic and bell pepper, and sauté for about 2 minutes.
  4. Add the ground meat or vegetables and cook until the meat is well browned or the vegetables are softened.
  5. Add tomatoes, cumin, sweet paprika, oregano, lime juice, salt, and pepper. Simmer over low heat for about 10 minutes.
  6. In a small saucepan, melt the butter, add flour, and cook for a minute. Add cumin and sweet paprika. Cook for another minute.
  7. Pour in the broth and simmer over low heat for about 5 minutes until the sauce thickens.
  8. Place about a tablespoon of filling on each tortilla and roll it up. Arrange them in a baking dish.
  9. Pour the prepared sauce over the enchiladas and sprinkle with grated cheese.
  10. Bake in the oven for about 20 minutes until the cheese melts and turns slightly golden.

Serving: Enchiladas taste best with sour cream, chopped cilantro, and avocado slices. You can also add rice and beans to make the dish more filling.
