Recipe for Enchiladas

Ingredients:
- 8-10 corn or flour tortillas
- 500 g (17.5 oz) ground beef or chicken (or vegetables, such as chickpeas)
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon sweet paprika
- 1 teaspoon oregano
- 1 tablespoon lime juice
- Salt and pepper to taste
- 2-3 tablespoons oil
- 200 g (7 oz) grated cheese
- 1 can of tomato puree
- 2 tablespoons flour
- 2 tablespoons butter
- 1 teaspoon cumin
- 1 teaspoon sweet paprika
- 1 cup chicken or beef broth
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
- In a frying pan, heat oil and add the chopped onion. Sauté until golden brown.
- Add garlic and bell pepper, and sauté for about 2 minutes.
- Add the ground meat or vegetables and cook until the meat is well browned or the vegetables are softened.
- Add tomatoes, cumin, sweet paprika, oregano, lime juice, salt, and pepper. Simmer over low heat for about 10 minutes.
- In a small saucepan, melt the butter, add flour, and cook for a minute. Add cumin and sweet paprika. Cook for another minute.
- Pour in the broth and simmer over low heat for about 5 minutes until the sauce thickens.
- Place about a tablespoon of filling on each tortilla and roll it up. Arrange them in a baking dish.
- Pour the prepared sauce over the enchiladas and sprinkle with grated cheese.
- Bake in the oven for about 20 minutes until the cheese melts and turns slightly golden.
Serving: Enchiladas taste best with sour cream, chopped cilantro, and avocado slices. You can also add rice and beans to make the dish more filling.
