- 1 whole duck (about 2kg/70oz)
- 5 medium apples
- 1 tablespoon of marjoram
- Salt and pepper to taste
- 200g (7oz) butter
- 200ml (6.7fl oz) of water
- Wash the duck thoroughly, pat dry and rub with salt, pepper and marjoram.
- Wash the apples, cut into quarters and remove the cores. Then stuff the duck with them.
- Transfer the duck to the roasting pan, skin side down. Pour water and add diced butter.
- Bake the duck in an oven preheated to 180°C (356°F) for about 2 hours. Every half hour, baste the duck with the fat that melted during roasting.
- After roasting, turn the duck skin side up and bake for about 30 more minutes, until the skin is crispy.
- Serve hot, cut into portions, with apples and the sauce that formed during baking.
