- 500g (17.6oz) chicken breasts
- 1 large onion
- 2 cloves of garlic
- 1 tablespoon of vegetable oil
- 2 tablespoons of curry paste
- 400g (14.1oz) canned tomatoes
- 200ml (6.76 fl oz) coconut milk
- Salt to taste
- Pepper to taste
- Wash chicken breasts, pat dry and cut into cubes. Peel the onion and garlic and chop finely.
- Heat the oil in a pan, then add the chopped chicken. Fry until the meat starts to brown.
- Add the onion and garlic to the chicken and fry for a few minutes.
- Add the curry paste and mix until everything is coated with the spices.
- Add the tomatoes and juice to the pan and mix. Reduce the heat, cover the pan and simmer for 10 minutes.
- Then add coconut milk, salt and pepper. Mix everything together and cook for a further 5 minutes.
