Ingredients:

  • 220g (7.7oz) wheat flour
  • 1 teaspoon of baking powder
  • 120g (4.2oz) butter
  • 120g (4.2oz) sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • pinch of salt
  • Lemon cream:
  • Zest of 2 lemons
  • 120ml (4 fl oz) freshly squeezed lemon juice
  • 200g (7oz) sugar
  • 4 eggs
  • 150g (5.3oz) butter

Instructions:

  1. Preheat oven to 180 degrees C (356 degrees F). Line the baking mold with baking paper.
  2. Combine the flour, salt and baking powder in a large bowl. In another bowl, beat butter and sugar until fluffy.
  3. Add the eggs to the butter mixture, one at a time, mixing well after each addition. Add vanilla extract.
  4. Add the flour to the egg mixture, mixing until combined.
  5. Pour the batter into the pan and bake for 30 minutes until the pastry is golden and springy to the touch. Leave to cool.
  6. In the meantime, prepare the lemon cream. In a saucepan, mix lemon zest, lemon juice, sugar and eggs. Cook over low heat, stirring constantly, until the mixture thickens.
  7. Add the butter to the hot lemon mixture, stirring until dissolved. Cool the cream.
  8. When the cake is completely cold, spread the lemon cream over it and decorate as desired.
